The Pope Garlic Sauce

If bell pepper, celery, and onion are the Holy Trinity of Cajun cuisine, garlic is the pope. This sauce adds everyone’s favorite aromatic to a blend of cayenne and Tabasco peppers with cane vinegar and a little honey.

Put some of this in a Cajun red gravy, sauce picante, or just a dash on top of some fresh shucked oysters.
